I am a big fan of making and drinking
hard cider. I use a book titled,
The Art of Making Cidermaking by Paul Correnty. The best book I have ran across on this subject - Easy, simple to understand, and some great recipes.
I have made a friend of a local cider press farmer who fills my four carboys from the last pressing of the year. More natural sugar along with natural yeast. I tend to use Lager yeast as I like the finished product. There are a whole host of yeasts you can use including cider yeast and natural yeast. I LOVE only using natural yeast however, there is a greater chance it will not work out - The end product coming out cloudy and a bit 'off'.
