Food Guru advice needed

 It is recommended that a person should eat 56 to 78 grams of fat in a diet of 2000 calories. I seen prepper recipes that call for Non-Fat milk. On a long term diet of rice/beans and leafy vegetables, there's no fat in game, wouldn't regular powdered milk be better for the diet?

To my knowledge, ALL powdered milk contains NO fat.  I store raw/unrefined coconut oil as source of fat.  I even consume spoonfuls on a regular basis as a part of my regular diet (it provides quick energy without carbs/insulin spike).  I've been doing the carb restriction/NO sugar thing for a while now.  I've lost 70 lbs. (fat, not muscle) and still losing...yeah, I was a fat ass.

I bought powdered milk but while shopping for it I've seen some that said NO-Fat and some didn't say anything at all so I assumed it was whole milk.

One of the reasons you don't have fat in powdered milk is that fat goes rancid much more quickly than the other ingredients.  By drying it and getting out the fat it'll last longer. 

There are several places you can get fat in a TEOTWAWKI, assuming you don't have livestock (chickens have schmaltz, for instance, or cow/sheep/goat's milk, etc.).  You can gather nuts and seeds, eggs, game will have some fat (turkey, deer).  Insects give both protein and fat.  It can be done.

how about lard?
Lard will only stay fresh if frozen.  If refrigerated you may get a few weeks at best.  Grocery store, on the shelf lard, is fully hydrogenated (a.k.a. pure trans fat, a.k.a. poison) for shelf life.  I went through this process a few years ago looking for a shelf stable source of fat...I'm telling you raw, unrefined coconut oil is the best answer...unless you're allergic to coconuts.  An alternative would be Ghee...It's basically shelve stable clarified butter / butter oil...it's significantly more expensive though...but you can make it yourself at home from store bought butter (similar to the regular canning process).

I'll add another option. Red feather butter is pure butter in a can. Reports claim it can last a decade if not more. This stuff is not powdered or anything. The real deal. I bought a case and have it tucked away.

A second option is a food called Soylent. This is an all-in-one food in powder form that contains everything the human body needs. They claim a shelf life of 1 year but my personal stash is 3-4 years old and still good to go.
