Tried this the other day and as a fan of mash'ed taters, and hailing from the land of taters, they were a bitchin' substitute, less carbs and starch- They were absolutely delicious!

We're gonna have to try that.  I've mashed turnips, butternut squash, and sweet potatoes as a substitute, but hadn't thought of cauliflower.

A good snack food swap if you want something crunchy like potato chips or popcorn, is baked kale.  Take some kale, rip it up into pieces, spread a single layer on a baking sheet, dribble a little olive oil and sprinkle some sea salt on top, bake at 350 for 10-15 minutes when edges start to brown.  I didn't think it would be that good, but the kale turns into the lightest crunchiest thing and you can't stop eating it.

Love Paleo. You tend to lose fat and gain muscle. I haven't really "lost" weight.

Technique, thanks for turning us onto mashed cauliflower, we tried it for dinner tonight and it was tasty!  I stirred in a little fake butter (smart balance buttery spread), 2% milk, garlic salt, and chives with the cauliflower after mashing it, paired with pot roast and an extra veggied-out salad.  TG and I are both in warm happy food comas right now  [URL=http://www.smileyvault.co
