They factor in heat, cold, and general rot.  They fail to consider the zombie virus infects ever cell in a body causing it to effectively become heat, cold, and general rot proof by a factor of about 500.

So, 3 day body rot in the general corpse today would take close to 5 years to get to the really stinking point let alone the falling apart on being vertical part.
