#1 Lower maintenance and easier repair.
#2 Less weight and ease of carry.
#3 Mildew resistant fibers. Mildew can thrive in canvas.
#4 Cost. Not seen any in the price range you are looking for. My own was about $500 when I was looking and that was pushing it for my wants/needs.
Either way I don't see a tent as a necessary bug out or prepping tool. Does it have it's place? Yes, for instance, my wife and son would undoubtly complain about sleeping under the stars and I'd never hear the end of it. I think the tent is more so a temporary fixture to sustain comfort while building a more permanent fort of sorts. The best advice I can give in dealing with canvas, particularly for what you want to spend, is to look into building your own.
