STEAK STEW
I braise or brown both sides in a little oil. Then I just cover with
water and do a pot roast, small scale. I season it with sea salt and
pepper. In less than 2 hours, you have tender meat. During that last
1/2 hour or so, dice up potatoes (I used 5 little ones, yukon
golds), carrots (3 medium sized sliced), Egyptian Onions (three
green stems sliced), Italian Sage (5 leaves), green beans (organic
half pound frozens) and cook in a small amount of water, just enough
to cover as you want strong broth. Add the fresh diced garlic last,
simmer then drain off the liquid but save it when all is tender. Cut
up the meat but leave the meat juices in the pan, you will have a
nice broth at this point, do not add buillion to it, you won't need
to. Put the veggies and the meat diced back into the meat broth
taste it, adjust your seasonings now. Then add just enough of the
veggie broth to make it a stew, save whatever is left, even freeze
it. You can add tomatoes etc.... Remember you are avoiding buillion
cubes or added broth that you buy as to what they put in it you dont
want~! Plus this is cheaper! Most broth is made with preservatives
and we all need to avoid them. They are not organic and if they
are...you pay for them. This made enough for 6 bowls for us.
So dinner once and l saw us eat off it like 3 days?
