Well it is that time of the year for boiling 160 gallons of maple sap.
Started at 0900E hrs. this morning and will close everything down between 2100E and 22E-hrs for the day tonight. Rain coming in this evening but should clear up by mid-morning then back at it.
160 gallons of maple sap will render about 3-3 1/2 gallons of syrup.
We can boil down with my new evaporator 3.8 gallons of sap an hour. So for 160 gallons that is about 42 hours of straight boiling. We did 12 hours of boiling today. Tomorrow another 12 hrs and then Saturday going for 14 hours, and I will have most of it done. Depending on weather, I might do the rest Monday/Tuesday.
Then it is time to boil the remaining 4-gallons down to syrup.
Now What do I do with 3+ gallons of syrup?
