ALIA OILIA OR SPAGHETTI WITH OIL AND GARLIC
8 cloves of garlic thinly sliced
1lb spaghetti
1/2 cup olive oil
Red pepper to taste (optional)
salt for water to taste
1 cup finely grated Parmigiano-Reggiano
Black pepper
1/4 cup parsley
Boil salted water and add spaghetti cook until almost done
Saute garlic until just brown
Drain spaghetti but reserve 1/4 cup of the water
add spaghetti to the oil and saute for a few minuets adding the water
add red pepper, cheese and parsley mix well.
Serve with black pepper and more cheese on top.
Some times I add broccoli or sliced olives.
The trick to it not being over powering oily is by adding the water
Some people use 1/2 butter and 1/2 olive oil
Just writing this made me hungry.

I am not a big fan of olive oil. But this recipe has me reassessing my priorities.
