But the nitrates.  How will we live without nitrates.   Trump stole the nitrates.  Take back out streets and nitrates.

I have in my freezer a whole side of fresh bacon from the last pig that was butchered. I wanted to try something else than nitrates and smoke it myself. It will be a spring project.

I was about to buy some pork belly and make my own bacon but I've never dont it before, whats your process?

@ Grizz - I will post the groups recipe once I have figured it out.  :hiding: Tomorrow, 'the group' is meeting for a New Years day feast. One of the gals is in charge of smok'en. She texted me that she has a non-nitrates recipe to share.

Everybody has a priority and a secondary assignment.  ;)
